In its simplest terms, a Linzer torte is a tart made of nutted, short dough with a jam filling. But, what with humans having an irrepressible knack for variety, we have Linzer tortes in which the butter is creamed and the texture soft and cakey, or rubbed-in and the dough is crisp; tortes made with almonds, walnuts, or hazelnuts; spiced (lightly, heavily) tortes, and tortes made of doughs which are not spiced at all.

There are casual people who will say "use your favorite jam, so long as it is tart," and commanders who insist that the jam must be red currant, or raspberry, apricot or black currant - namely, the same that their grandmothers used.
